Egg-citingly Healthy Meals!

Eggs are one of the most popular and highly recommended sources of protein. Unless you develop an allergy towards it, eggs are one of the best ways to complete a simple meal and turn it into a wholesome one.

This versatile ingredient can be cooked in many ways and you can almost never go wrong with it no matter what the combination of your ingredients are in a meal. From scrambled, poached, boiled to fried, just about any cooking method makes an egg taste good. This month, we will explore baked eggs. To bake eggs, you can either use an oven or for smaller families, an oven toaster or an air-fryer would do the trick too!

Recipe 1: Baked Eggs


  • Plum tomato
  • Eggs
  • 50 g Baby Spinach
  • 2 tsp Cajun seasoning
  • A pinch of sea salt
  • A pinch of black pepper


  1. Preheat oven to 200C.
  2. While the oven is heating up, rinse baby spinach and strain.
  3. Then, chop tomato into small cubes and divide into half.
  4. In two ramekins, place baby spinach at the bottom of the ramekin and season with salt and pepper.
  5. Then, followed by chopped tomatoes and sprinkle with Cajun seasoning.
  6. Lastly, break an egg into each ramekin and bake for about 20 minutes or until the egg is cooked to your preference.

Recipe 2: Avo-Eggs


  • Avocado
  • Eggs
  • 1 tsp Parsley, chopped
  • A pinch of sea salt
  • A pinch of grounded black pepper


  1. Heat the oven to 180C.
  2. While oven is heating up, half the avocado and de-seed it.
  3. Then, place avocado on a baking tray.
  4. Gently crack an egg into a small bowl, be sure that the egg yolk is intact.
  5. Then, slowly pour the egg into the hole of the avocado.
  6. Repeat steps 4 and 5 for the other half.
  7. Season with sea salt and black pepper.
  8. Then, bake for about 10 to 15 minutes.

Once egg is cooked, sprinkle chopped parsley and enjoy immediately.
